Fruit Slaw

1 lb shredded cabbage
½ pint raspberries
½ pint blueberries
½ pint blackberries
1 pineapple, cored and cut
1 qt strawberries, sliced or chunked
1 can mandarin oranges
1 cup Marzetti’s slaw dressing (lite)



Wash berries and pat dry. Combine cabbage and dressing, gently stir in fruit. Chill.


*approx. 12 ½ cup servings. Less than 2.5 Weight Watcher points per serving

Oriental Salad

shredded cabbage (About 1/2 bag of cole slaw mix)
Chopped lettuce
Dried pineapple (or you could use fresh)
slivered red onion
crunchy chinese noodles
slivered almonds
*optional- diced cooked chicken



Toss with one of the many oriental viniagrette dressings on the market.

Cabbage Soup

Cabbage Soup (again EASY!)



1. Brown diced smoked sausage (I add onion)


2. Add water (about 1/2 pot for full servings)


3. Add carrots (let cook 5-10 min)


4. Add potatoes (let cook 5-10 min)


5. Add cabbage and salt and pepper (cook until wilted)


Be warned Val, the soup tastes GREAT, but the house will have the aroma of cabbage. DH closes all the door to the bedrooms when I make this, so we won't be smelling cabbage as we sleep! btw, I don't actually had a 1/2 pot of water (that's my mom's recipe). I add maybe 1/3 pot water and then add more towards the end if needed (rarely). The less water, the more the sausage taste soaks into the veggies (and therefore less salt needed) which is the way I like it.

PANCIT (filipino)

1. Soak 1 pkg rice sticks in hot water 3-5 minutes; drain; add ab. 5 tbsp soy sauce and set aside



2. Saute 1 clove garlic and onion (diced)



3. Add 1 cup shredded meat (chkn, pork, beef), S&P if wanted



4. Add 2 cups chicken broth and 1 chken cube



5. Add shredded cabbage and carrots (ab. 1 cup each)



6. Add noodles



7. Add calamansi (kumquat) juice... can do lemon for a different taste



**You can use shrimp instead, but don't cook too long!

Ground Turkey Pot Sticker/Empanada

INGREDIENTS
  • Ground turkey
  • Ginger
  • Garlic
  • Salt and Pepper
  • Onion
  • Shredded Cabbage
  • Soy Sauce
  • Won Ton Wrappers (we ate this once w/o wrappers with rice) or Empanada wrappers

DIRECTIONS


1.Saute ground turkey until it is brown and crumbled. Season turkey as it cooks with ginger and garlic (add salt and pepper as well if you want)

2.Chop/mince onion and add to turkey and sautee until onion is soft.Add shredded cabbage to onion and turkey mixture.


3.Add a few drops of soy sauce and some water and sautee until the mixture is soft.


4.Take a won ton wrapper, moisten the edges with water and place about 1 tsp of the turkey/onion/cabbage mixture into the center. Fold won ton so the filling does not fall out. Either put in a steamer for about 10 minutes or sautee in a non stick pan sprayed with cooking spray. **For empanadas bake... I never time it, just watch them

Baby Carrots

Cabbage (sliced)

Salt and Pepper

Sausage and Cabbage

One of our favorite recipes here is sausage and cabbage. It's the most simple thing.
One smoked beef kielbasa cut up into bite sized pieces. Throw it into a big pot and let it cook and render it's juices and flavor.... cut up one head of cabbage and throw it into the pot and mix it up together so the cabbage has the juices of the cabbage on it cover the pot and let it cook. When the cabbage is as done as you like, enjoy! Some days I add salt and pepper depending on what brand of sausage I buy. But I usually let the meat do all the work for me.

Now I like it this served over rice or barley, but hubby likes (well, I mean loves) it plain. Or you can add potatoes and steam them with the cabbage/meat. But if you add potatoes (which is good) you'll definitely want to spice it up yourself... I use plain salt/pepper/garlic powder.
