Delicious Chicken Casserole:

The first is from allrecipes.com and is called
Delicious Chicken Casserole:
You'll need 4-6 chicken breasts, 2 stalks celery, salt & pepper, 1 cup cooked rice, 6 ounces sour cream, 2 cans condensed cream of chicken soup, 1/4 teaspoon celery salt, 1/8 teaspoon onion powder, 1/4 teaspoon garlic powder, 2 cups crushed Ritz crackers, 1/2 cup melted butter.
Directions:
Boil chicken, celery, salt and pepper (to taste), and enough water to cover.  Cover, reduce heat, & simmer 35 mins.  Drain but save 1 cup of the liquid broth first.  Cut or shred chicken into bite sized pieces.
Stir together sour cream, soup, broth, celery salt, onion powder, garlic powder, and salt & pepper to taste.  Mix in cooked rice and chicken.  Place in 9x13 casserole.  In a ziploc bag shake together crushed crackers and melted butter then sprinkle on top of casserole.
Bake at 350 degrees for 30 to 35 minutes.

Chicken & Rice Casserole

I often times do a chicken and rice casserole which is easy, can be made ahead and reheats well. You bread 4 chicken breasts with flour/salt/pepper and brown in the oil of your choice. Meanwhile put some chopped onion, can of mushrooms with juice and 1/2 cup saffron rice, 1/4 cup regular rice (I use brown rice) in a casserole dish. Place chicken breasts on top and pour a can of chicken broth over the whole thing. Bake on 350 for 1 hour.

MINESTRONE BEANS AND RICE

I like this meal to freeze. It's not a casserole, which makes it a little different change from most freezer meals.  With just 3 of us, we eat once fresh and then I actually keep some for leftovers later in the week and freeze the rest in two separate batches.  It creates at least 4 meals for us.  I make the rice fresh.
It's also really cheap. 

MINESTRONE BEANS AND RICE **

INGREDIENTS

Ground Beef (I use ground turkey)
2 cans pinto beans
2 cans kidney beans (I've used black beans instead since DH isn't wild about kidney beans)
2 cans minestrone soup
1 can Rotell tomato and chili (I use about have the can for Caleb; not as  spicy that way; I've also added diced tomatoes sometimes in the place of the other half of Rotell)
1 onion chopped

DIRECTIONS

1. Brown meat and onions
2. Add rest (don't drain cans)
3. Stew about 20 minutes
4. Serve with rice

(I often half this recipe and still have lots to freeze)
The minestrone soup adds tiny bit of veggies but you can add greenbeans or peas for more.  I drain them and then add.

BISTEK/ADOBO

I made this tonight with fresh green beans. I just added the green beans to step 4 and let it simmer until cooked.  I also added cornstarch to the whole recipe so that the marinade thickened to the meat and then also to the green beans.  Caleb ate the green beans up! He's been anti-green beans for the past few weeks so I was a little surprised.
(It's a modified filipino recipe)

BISTEK/ADOBO ****

INGREDIENTS

2 lbs. steak/pork/fish (sliced thin)
2 T lemon juice
3 T soy sauce
1/2 tsp pepper
1/4 c. cooking oil
1/2 c. water
1 c. onion (sliced into rings)
salt to taste

DIRECTIONS

1. Marinate meat in lemon juice, soy sauce, pepper, salt
2. Cook onion in skillet and remove
3. Cook meat; remove
4. Add marinade and water to skillet (10 min)
5. Pour over meat and onion rings

Chicken and Rice

This is such a great idea. Everything sounds yummy.




We are going to have Chicken and Rice.



1 pkg of chicken breasts, cut into tenders



1 can of cream of chicken soup



1 8-oz package of mozzarella cheese



cooked rice



In a greased 9x13 baking dish, add chicken, cream of chicken soup, 1 soup can of water and salt and pepper. Mix as well as you can. Add cheese on top. Bake at 350 until cheese has browned. Serve over rice.



I usually have some sort of vegetable as well. It is yummy, and very easy.

Hawaiian Haystacks

Tonight, I am making Hawaiian Haystacks. Raegan, you might not like this because it is in the slow cooker and has cream of chicken soup :)



*10-12 chicken tenders (I usually have chicken breast, so I use 2-3 chicken breasts)

*1 cup chicken broth (I always use the whole can)

*2 cans cream of chicken soup, condensed

*1 can (12 oz) evaporated milk



Grease slow cooker. Add chicken. Combine remaining ingredients and pour over chicken. Cover and cook on high 3-4 hours or low 6-8 hours.



Serve over rice and with a variety of toppings. Ideas are cheese, tomatoes, olives, celery, peas, pineapples, shredded coconut, raisins, Chinese noodles, green peppers, green onions...whatever you like.

By the way, fresh pineapple is amazingly good with this.

Shrimp and Cheesy Rice

I think we are going to do shrimp and cheesy rice tonight (Lynnae will get the cheesy rice with chicken instead and a veggie).




Cook shrimp, set aside.



Melt 1/4 cup butter in a skillet, dump in a can of cheddar cheese soup, green onions (maybe 1/4 cup or a little more), green bell pepper (1/3 cup or so), and a bunch of milk so that the the mixture is a light yellow orange color and the butter isnt overwhelming. I never measure the milk... sorry!! I put a lot in. Add pepper.. as much as you like! :) Stir with a whisk. Mix in shrimp.



Cook rice (we use instant bc its fast :)). Serve rice on plate with sauce on top.



It's really good and super easy.

Stir Fry

Tonight is one of my "go-to" meals. It is kind of a hodge-podgey stirfry. I always thow tons of veggies in this. You could use any veggies you want. I will list the ones I typically use. I make a lot to have leftovers for lunches for DH and I. My family loves this and eats a lot of it! Use a big skillet if you plan on making this much. Or spilt in two skillets.




Ingredients:

2 packages of Polish Kielbasa sliced into coins.(There are several kinds, I use a lean one made with turkey)

Any kind of veggie you want to add. I normally add:

Chopped green/red/yellow peppers

Broccoli florets

Chopped celery

Sliced mushrooms

Sliced carrots

Cherry tomatoes halved

Brown rice



Directions: Add kielbasa first to begin browning. Then start chopping and adding veggies. I add carrots and broccoli first as they take the longest. I cook my veggies till pretty soft as Emma still only has 6 teeth but that is up to you. Then I add celery, peppers and tomatoes. Mushrooms come last. Season with Italian seasoning. Cook until veggies are the way you want them. Serve over bed of rice and top with parmesan cheese.

Stir Fry

tonight is a stir fry recipe from my neighbor...i'll let you know how it turns out, but it smells great so far:




chicken or tofu (i used 3 chicken tenders)
1 small onion
8 oz mushrooms (i only had half a package, so just use what you have9
10 oz spinach or kale (we are using kale)
1T thyme
1T (to taste) soy sauce
olive oil



using stir fry pan (i use a wok) cook chicken or tofu in olive oil at med high heat and season with salt, pepper, thyme and soy sauce. set aside

add more oil to the pan. throw in diced onion and sliced mushrooms. saute.

add chopped spinach or kale, turning until wilted. this takes a bit of space, so if you pan isn't large, i would set aside the onions/mushrooms first. also drizzle with soy sauce. kale takes longer than spinach, so take that into account.

add in chicken and stir. test seasonings. serve over white or brown rice.



ps: caroline doesn't do well with kale, so she will have the chicken and rice with chopped baby carrots (raw). :)

Southwest Chicken

2 cans kernal corn

2 large cans black beans

6-8 chicken tenderloins (I use frozen)

Large jar of salsa

cheddar cheese



Rinse and drain corn and beans, layer in bottom of crock pot. Pour about a third of the salsa over it. Add the chicken and top with rest of salsa. Cook on high 4-6 hours or low 8-10. You can add cheese the last 5 minutes, or just allow each person to add their own. We serve it with brown rice and chips, or make borritos out of it. It also freezes well!!!

Charisa' Chicken

I'm a huge crock pot fan. I use mine at least once a week. My favorite thing to do is pull out of the freezer a bunch of chicken legs... pour "greek seasoning" on it, a can of diced tomatoes with chilies, and some green olives. Let that puppy go all day and enjoy over rice. It's SO GOOD. If you don't have "greek seasoning" I just use dried herbs like mint, oregano, parsley, garlic

Fish Tacos

Fish Tacos
4 cups slaw mix
½ cup thinly sliced red onion
¼ cup light mayo.
Most of the zest from 1 lime
3 tbs. fresh lime juice
2 tsp sugar
6 frozen battered fish fillets
8 taco shells




*Toss coleslaw mix, onion, mayo, sugar, zest and juice. Leave at room temp.
*Bake fish fillets at box directions. Approx. 25 minutes.
*Break fish into chunks. Spoon into warmed shells and top with coleslaw.
**Serve with Knorr Mexican Rice. I also add corn to our tacos. YUMMY!!

Curried Chicken Casserole

Curried Chicken Casserole



3 cups cooked white rice
2 pkg. frozen chopped broccoli (10 oz. each), thawed

2 large chicken breasts, cut up & cooked

2 cans Soup (1 cream of mush. & 1 cream of Chicken)

¾ cup mayo

¾ cup milk

1 tbs lemon juice

2-3 tsp curry powder (2 makes it spicy but not hot)




*Heat oven to 350. Coat a 12 x 8 baking dish with cooking spray.
*Layer the cooked rice, about ¾ of the broccoli and the chicken in pan. (Season the chicken while cooking)
*In a large bowl, mix the soups, milk, mayo, lemon juice and curry powder together. Spread the sauce evenly over the top; sprinkle remaining broccoli over the top.
*Bake 30 minutes covered with foil. Uncover and bake another 15.

Chicken, Broccoli with Rice

Chicken, Broccoli with Rice



4 skinless, boneless chicken breasts
1 can Cream of chicken soup
1 ½ cups water

¼ tsp paprika

¼ tsp black pepper

1 ½ cups instant rice

2 cups broccoli florets (fresh or thawed)



*Cook chicken until well browned. Remove from skillet. Slice into thin strips.
*Stir soup, water & spices into skillet. Heat to a boil.
*Stir in rice and broccoli. Reduce heat to low. Return chicken to skillet. Sprinkle additional paprika dn pepper. Cover and cook 5 minutes, or rice is tender and chicken is cooked through.

Green Pepper Casserole

Last night was green pepper casserole




· 3 green peppers chopped into squares
· ½-1 cup long grain rice (just not instant)
· 1 can diced tomatoes
· 1 can tomato sauce
· ½ large onion diced
· A couple of cloves of garlic minced

· A little water if necessary

· 1- 1.5 lb ground beef

· 1 ½ -2 cups shredded mozz. cheese


Last night I threw in some left over mushrooms too and it was good




Brown beef and drain excess fat. While browning, do your chopping. After browned, mix all ingredients in a 13x9 dish. (spray dish with pam before adding mixture)


*The actual recipe only calls for ½ c rice and ½ c water. I like a little more rice and more “tomato-ey” so I add the can of tomato sauce. You don’t really need the water since you are adding the tomato sauce, but I do just to make sure all rice gets plump.


Bake at 350 covered for 1 hour. Give it a little stir about ½ way so rice on top gets to some liquid. Take off cover for the last 5 min and add cheese to the top. Put it back in till cheese is melty and bubbly.

PANCIT (filipino)

1. Soak 1 pkg rice sticks in hot water 3-5 minutes; drain; add ab. 5 tbsp soy sauce and set aside



2. Saute 1 clove garlic and onion (diced)



3. Add 1 cup shredded meat (chkn, pork, beef), S&P if wanted



4. Add 2 cups chicken broth and 1 chken cube



5. Add shredded cabbage and carrots (ab. 1 cup each)



6. Add noodles



7. Add calamansi (kumquat) juice... can do lemon for a different taste



**You can use shrimp instead, but don't cook too long!

Red Beans and Rice

Ingredients:

1 beef smoked sausage (sliced)

1/2 onion, finely chopped

2 cloves garlic, minced

2 cans red beans, drained

fresh chopped parsley (I use two small handfuls)

2-3 Tbsp worchestershire sauce

1/4 tsp. oregano

1/4 tsp. thyme

salt and pepper to taste

4 cups cooked rice (we've used brown, white, and Jasmine and they are all good with this recipe!)


Saute sausage, onions, and garlic until onions are soft. Drain grease if needed. Add seasonings, beans, and one can of water. Simmer for 20 - 30 minutes adding more water if necessary. Serve over rice.

Yellow Curry

  • 3 medium potatoes, scrubbed and chopped evenly
  • 1/2 medium onion, sliced thick (more if you really like onion)
  • 3 medium carrots, cleaned and sliced
  • 1 can coconut milk
  • 1/2 -3/4 cup chicken broth
  • 2-3 tbs hot curry powder
  • 1 tbs minced garlic
  • 1 tbs minced ginger-I feel it is optional. Use it if you have, but don't go out and purchase it if you don't.
  • 1-2 tsp salt
  • Dash of cayenne pepper
  • 1/4 cup peanuts or cashews-optional

 
*Pour the coconut milk in large pan and whisk together with the curry powder, ginger,salt and garlic. Often the milk will seperate in the can. Add broth. Bring to a boil.

 
*Cook your veggies (potatoes and carrots first. Add onion a bit later) in the broth and milk mixture until tender, but not mushy. Stir often. medium high heat.

 
*Cook/steam seperately 4 servings of white rice.

 
*I usually do this as a meatless meal, but it can have thin pc. of cooked chicken (2 breasts) added. You can also add red bell pepper or bambo shoots, if you like.

 
*To serve, place a serving of rice in a large shallow soup type bowl, place curry over the top. Sprinkle with peanuts or even cashews.

 
*Serves 4.

 
**My hubby likes it HOT. So either he sprinkles more cayenne over his rice before the curry goes on OR he uses a Thai spicy sauce that we buy at the grocery store.

 
** we usually eat 3 servings that evening and DH takes the 4th one to work the next day. Great leftovers!

 
**Sometimes I make store bought egg rolls or homemade Crab Rangoon to go with.

Sausage and Cabbage

One of our favorite recipes here is sausage and cabbage. It's the most simple thing.
One smoked beef kielbasa cut up into bite sized pieces. Throw it into a big pot and let it cook and render it's juices and flavor.... cut up one head of cabbage and throw it into the pot and mix it up together so the cabbage has the juices of the cabbage on it cover the pot and let it cook. When the cabbage is as done as you like, enjoy! Some days I add salt and pepper depending on what brand of sausage I buy. But I usually let the meat do all the work for me.

Now I like it this served over rice or barley, but hubby likes (well, I mean loves) it plain. Or you can add potatoes and steam them with the cabbage/meat. But if you add potatoes (which is good) you'll definitely want to spice it up yourself... I use plain salt/pepper/garlic powder.

Fried Rice

You can do that fried rice with any leftover meat.. In fact, whenever I make fresh rice for a meal, I always make extra and put it in the freezer.. fried rice is best with day old cooked rice. So, any time I have any leftover meat (chicken, ham, pork, bacon, shrimp, - I've never tried it with ground beef - that sounds odd) - it makes a super quick meal - 20 minutes at the most. Perfect for Sundays.

My dad owns a chinese restaurant and the key to their fried rice is massaging the rice. Lol They rinse it a few times, then cook it, let it cool, and then they take their hands and break up every tiny clump. They do it over and over again until the rice falls through their fingers like sand.
