Slow Cooker Chicken and Dumplings


Ingredients

  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 1 onion, finely diced
  • 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

Directions

  1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
  2. Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

I used 1 cup chicken broth rather than water, and a 16 oz package of biscuits rather than 2x10 oz. I also added some extra spices (cream of chicken w/herbs soup instead, parsley and curry). The kids ate it up! I tried adding some frozen peas too, but they didn't turn out great.

Thai chicken curry

500 g boneless chicken breast or thigh in small pieces or 
1 red onion chopped
2 tbsp red curry paste – bought or homemade
1 can coconut milk
1 tbsp brown sugar
½ cup chopped cherry tomatoes optional
Handful of basil leaves torn
2 tbsp oil
¼ cup toasted cashew nuts
Basmati rice to serve

Heat the oil in a pan and sauté the onion. Add the boneless chicken meat and stirfry till cooked. Stir in 1-2 tbsp curry paste and a can of coconut milk. Simmer till chicken is cooked and sauce reduced. Stir in sugar and adjust seasoning to taste. Serve on a bed of boiled basmati rice and garnish with torn basil leaves, chopped cherry tomatoes (when in season) and a handful of toasted cashews.

Red Curry paste

1 tbsp cumin seeds
1 tbsp peppercorns
1 tbsp coriander seeds
1/2 cup chopped red chillies
2 onions chopped
4 garlic cloves crushed
3 tbsp oil
2 tbsp lemon juice
1 tsp turmeric

Grind the cumin, peppercorns and coriander in a food mill or pound in a mortar and pestle. Add other ingredients and blend to a smooth paste. Add more oil if necessary. Store in sterilised jars with a layer of oil on the surface and keep refrigerated.

I reduced it way too much in the end, and I should've added a bit more of the curry paste, but I didn't want to scare my kids off - but in the end they didn't eat it anyway! (well, one of them picked out the tomatoes, and one of them picked out the chicken..)

Three Cheese Chicken Penne Florentine

This is one of my favorites.  It might seem a little complicated, but if you do some prep work ahead of time, it's not bad.  I usually just buy a rotisserie chicken instead of cooking my own.  I also usually add extra spinach, and sometimes I skip the red bell pepper.  You can assemble it and freeze it too.
Three Cheese Chicken Penne Florentine (from Cooking Light magazine)
  • 1  teaspoon  olive oil
  • Cooking spray
  • 3  cups  thinly sliced mushrooms
  • 1  cup  chopped onion
  • 1  cup  chopped red bell pepper
  • 3  cups  chopped fresh spinach
  • 1  tablespoon  chopped fresh oregano
  • 1/4  teaspoon  freshly ground black pepper
  • 1  (16-ounce) carton 2% low-fat cottage cheese
  • 4  cups  hot cooked penne (about 8 ounces uncooked tube-shaped pasta)
  • 2  cups  shredded roasted skinless, boneless chicken breast
  • 1  cup  (4 ounces) shredded reduced-fat sharp cheddar cheese, divided
  • 1/2  cup  (2 ounces) grated fresh Parmesan cheese, divided
  • 1/2  cup  2% reduced-fat milk
  • 1  (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of chicken soup, undiluted
Preheat oven to 425°.
Heat olive oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add mushrooms, onion, and bell pepper; sauté 4 minutes or until tender. Add spinach, oregano, and black pepper; sauté 3 minutes or just until spinach wilts.
Place cottage cheese in a food processor; process until very smooth. Combine spinach mixture, cottage cheese, pasta, chicken, 3/4 cup cheddar cheese, 1/4 cup Parmesan cheese, milk, and soup in a large bowl. Spoon mixture into a 2-quart baking dish coated with cooking spray. Sprinkle with remaining 1/4 cup cheddar cheese and remaining 1/4 cup Parmesan cheese. Bake at 425° for 25 minutes or until lightly browned and bubbly.

Chicken Broccoli Casserole

This is from Cooking Light but I make it with whatever version I have light or full fat. I serve it over rice with a side salad... it's sooo good!
For crisper broccoli, remove it from the boiling water after three minutes.
Yield: 8 servings (serving size: about 1 cup)

Ingredients

  • 3  quarts water
  • 1  (12-ounce) package broccoli florets
  • 4  (6-ounce) skinless, boneless chicken breast halves
  • 1  (12-ounce) can evaporated fat-free milk
  • 1/4  cup  all-purpose flour (about 1 ounce)
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  freshly ground black pepper
  • Dash of nutmeg
  • 1  cup  fat-free mayonnaise
  • 1/2  cup  fat-free sour cream
  • 1/4  cup  dry sherry
  • 1  teaspoon  Worcestershire sauce
  • 1  (10.75-ounce) can condensed 30% reduced-sodium 98% fat-free cream of mushroom soup, undiluted
  • 1  cup  (4 ounces) grated fresh Parmesan cheese, divided
  • Cooking spray

Preparation

Preheat oven to 400°.
Bring water to a boil in a large Dutch oven over medium-high heat. Add broccoli, and cook 5 minutes or until crisp-tender. Transfer broccoli to a large bowl with a slotted spoon. Add chicken to boiling water; reduce heat, and simmer 15 minutes or until done. Transfer chicken to a cutting board; cool slightly. Cut chicken into bite-sized pieces, and add chicken to bowl with broccoli.
Combine evaporated milk, flour, salt, pepper, and nutmeg in a saucepan, stirring with a whisk until smooth. Bring to a boil over medium-high heat; cook 1 minute, stirring constantly. Remove from heat. Add mayonnaise, next 4 ingredients (through soup), and 1/2 cup cheese, stirring until well combined. Add mayonnaise mixture to broccoli mixture; stir gently until combined.
Spoon mixture into a 13 x 9-inch baking dish coated with cooking spray. Sprinkle with remaining 1/2 cup cheese. Bake at 400° for 50 minutes or until mixture bubbles at the edges and cheese begins to brown. Remove from oven; let cool on a wire rack 5 minutes.

Delicious Chicken Casserole:

The first is from allrecipes.com and is called
Delicious Chicken Casserole:
You'll need 4-6 chicken breasts, 2 stalks celery, salt & pepper, 1 cup cooked rice, 6 ounces sour cream, 2 cans condensed cream of chicken soup, 1/4 teaspoon celery salt, 1/8 teaspoon onion powder, 1/4 teaspoon garlic powder, 2 cups crushed Ritz crackers, 1/2 cup melted butter.
Directions:
Boil chicken, celery, salt and pepper (to taste), and enough water to cover.  Cover, reduce heat, & simmer 35 mins.  Drain but save 1 cup of the liquid broth first.  Cut or shred chicken into bite sized pieces.
Stir together sour cream, soup, broth, celery salt, onion powder, garlic powder, and salt & pepper to taste.  Mix in cooked rice and chicken.  Place in 9x13 casserole.  In a ziploc bag shake together crushed crackers and melted butter then sprinkle on top of casserole.
Bake at 350 degrees for 30 to 35 minutes.

Chicken Tortilla Casserole

This was favorite meal as a kid, and it's always been a big hit when I serve it too.   It sounds like a Mexican casserole, but once it's finished, it really just tastes like cheesy chicken yumminess.  It doesn't have Mexican spices, so it might be good for picky little eaters. I haven't tried it with E yet.  

Chicken Tortilla Casserole
  
2-3 lbs cooked, chopped chiken
1 cup chicken broth
8 oz. sour cream
10 flour tortillas (small size)          
2 cans cream of chicken soup
¼ cup chopped onion
4 cups cheddar cheese

-Combine chicken, onion, soup, and broth in a pot.
-Add salt and pepper.
-Cook until boiling.
-Remove from heat, and add sour cream.
-Fill tortillas with mixture from pot, sprinkle with cheese.  Roll up and place in a 9 x 13 baking dish (cover bottom with filled and rolled tortillas).
-Pour remaining mixture over rolled tortillas.
-Sprinkle remaining cheese on top.
-Bake at 350 degrees for 30-40 minutes.
-Let stand for 5 minutes before serving.

White Chili

Here is a white chili recipe I recently found.  I do this in the crock pot but you can do it stove top too.
1.5 lb chicken breast
1 can white corn or frozen corn (I have used both)
1 can chick broth
1 can cream of chicken soup
2 cans northern bean rinsed and drained (you can also use dried if you soak them first)
taco seasoning packet**
Sour cream, cheese, green onions chopped
Dump everything in crockpot except sour cream, cheese and green onions.  Cook on low 8-10 hours.  An hour before serving take chicken out and shred.  Serve with toppings.
**I made my own taco seasoning:
1 tbsp chili powder
2 tsp onion powder
1 tsp each: cumin, garlic powder, paprika, oregano and sugar
1/2 tsp salt

Chicken

Here's one that's low fat, easy and tasty (and really adaptable to whatever spices you like or have on hand):
- put 6 chicken pieces (I use boneless skinless thighs), salt and peppered in a casserole dish.
- mix a can of Campbells Half Fat mushroom soup in a bowl (don't add any water) with a minced garlic clove and a generous few scoops of frozen corn or peas (or whatever you like).
- stir and spread over chicken
-cover and cook at around 375/400 for about 45-60 minutes.
Serve over rice, couscous, egg noodles...whatever you have.

Chicken and Dumplings

Racheal Ray chicken and dumplings.  I follow the recipe, except instead of using the biscuit mix, I buy the premade biscuits that are in the pop open tubes.  Even easier, and it is so yummy.  :)


Ingredients

  • 1 1/2 pounds chicken breast tenders
  • 1 tablespoon olive oil, 1 turn of the pan
  • 2 tablespoons butter
  • 1 russet potato, peeled and diced
  • 2 medium carrots, peeled and diced or thinly sliced
  • 1 medium onion, chopped
  • 1 rib celery, diced
  • bay leaf, fresh or dried
  • Salt and freshly ground black pepper
  • 1 teaspoon poultry seasoning, 1/3 palm full
  • 2 tablespoons flour, a handful
  • 1 quart chicken broth or stock, canned or paper container, preferred brand Kitchen Basics
  • 1 small box biscuit mix(preferred brand Jiffy Mix)
  • 1/2 cup warm water
  • Handful flat-leaf parsley, chopped
  • 1 cup frozen green peas

Directions

Dice tenders into bite size pieces and set aside. Wash hands.
Place a large pot on stove over medium high heat. Add oil, butter, vegetables and bay leaf and cook 5 minutes, stirring frequently. Season mixture with salt, pepper and poultry seasoning. Add flour to the pan and cook 2 minutes. Stir broth or stock to the pot and bring to a boil. Add chicken to the broth and stir.
Place biscuit mix in a bowl. Combine with 1/2 cup warm water and parsley. Drop tablespoonfuls of prepared mix into the pot, spacing dumplings evenly. Cover pot tightly and reduce heat to medium low. Steam dumplings 8 to 10 minutes. Remove cover and stir chicken and dumplings to thicken sauce a bit. Stir peas into the pan, remove chicken and dumplings from heat and serve in shallow bowls.

Creamy Chicken-Apple Chili

Just made this last night: Creamy Chicken Apple Chili and Atalie ate 2 bowls! Served it w/ a salad. It was great. The apples don't add an apple taste. more of just a mild sweetness.

INGREDIENTS:

  • 1/4 cup extra-virgin olive oil
  • 2 pounds chicken tenders, cut into 1/2-inch-thick slices
  • 4 teaspoons chili powder
  • 2 teaspoons ground cumin
  • Salt and pepper
  • 2 apples, cut into 1/2-inch cubes
  • 1 onion, chopped
  • 4 tablespoons butter
  • 1/4 cup flour
  • 2 cups chicken broth
  • 3/4 cup milk
  • Two 15-ounce cans pinto or white beans, rinsed
  • 2 cups shredded monterey jack cheese (about 8 ounces)
  • Toasted tortillas, for serving
  • Chopped scallions, for serving

DIRECTIONS:

  1. In a large Dutch oven, heat 2 tablespoons olive oil over medium-high heat. Add the chicken, chili powder and cumin. Season with salt and pepper and cook, stirring, for 5 minutes; transfer to a bowl.
  2. In the same pot, heat the remaining 2 tablespoons olive oil. Add the apples and onion and cook, stirring, until softened, 6 minutes; add to the chicken.
  3. In the same pot, melt the butter over medium-low heat. Whisk in the flour for 1 minute; whisk in the chicken broth and milk until thickened, 3 minutes. Stir in the chicken-apple mixture and beans, bring to a simmer, then stir in the cheese. Serve with the tortillas and scallions.

Chicken Cordon Bleu

Just made my fav chicken meal tonight for friends.
Chicken Cordon Bleu
4 (ish) Chicken breasts (flatten w/ meat tenderizer) 
1 package of cream cheese
1 garlic clove
1 palmful of oregano
1 package of deli ham
1 cup (ish) of milk
1 cup of bread crumbs
1/2 cup of parmesan cheese
toothpicks
Preheat oven to 350. Mix cream cheese with garlic and oregano. Mix bread crumbs and parmesan cheese. Put milk in bowl. After you flatten the chicken, place ham on top, and put a spoonful of the cream cheese mixture on the ham. Roll up the stuffed chicken, using toothpicks to secure the chicken. Dip the chicken roll into the milk then dip into the bread crumb mixture. Place onto greased (spray) baking pan. Bake for 30 mins or until it's done. *Note that the chicken may have a pink color from the ham even though it may be done. 
I usually serve it with rice and green beans (tonight I also made squash - yum!) Enjoy!

BAKED TERIYAKI CHICKEN

This is a good one

BAKED TERIYAKI CHICKEN ****

INGREDIENTS
1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup white sugar (I use about 1/4)
1/2 cup soy sauce
1/4 cup cider vinegar (I used vinegar and a 1/4 of a cider drink packet!)
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
12 skinless chicken thighs

DIRECTIONS
1. Preheat oven to 425 degrees F (220 degrees C).
2. In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.

3. Place chicken pieces in a lightly greased 9x13 inch baking dish (lined with foil). Brush chicken with the sauce. Turn pieces over, and brush again.

4. Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.

5. Reserve 3/4 cup sauce for stir fry veggies.

6. Serve with rice (OF COURSE!)

EASY CHICKEN PARMESAN

THIS IS REALLY SIMPLE.  IT'S NOT GOURMET OR ANYTHING BUT IT'S GOOD :)

EASY CHICKEN PARMESAN

INGREDIENTS
chicken (sliced thin)
butter
Italian bread crumbs
Parmesan cheese
Provolon/Mozzarella cheese slices
Spaghetti sauce (we use Ragu)
Pasta

DIRECTIONS
1.  Set oven at 400 degrees
2.  Slice chicken in half (we like it thin!) and season with salt, pepper, garlic powder, onion powder
3.  Melt half a stick of butter
4.  Lay out Italian bread crumbs on a plate and stir in some parmesan cheese.
5.  Dip chicken in melted butter and then coat with bread crumbs
6.  Cook for 20 minutes.
7.  Place slice cheese (provolon, mozzarella; we use cheddar b/c Pen loves it that way!) on top of chicken and then top with Spaghetti sauce (we use Ragu)
8.  Cook for another 10 minutes.
9. Serve with pasta

I always warm up a little more sauce for the noodles and make garlic bread.
 
Of course you could make real sauce, but this is so much faster!

Raspberry Chicken

I got this recipe from a college roommate, and we just had it a few nights ago.  So good!
Raspberry Chicken
olive oil
1 red onion, chopped
4 boneless skinless chicken breasts
salt
pepper
dried thyme
1/3 cup seedless raspberry jam
balsalmic vinegar
serve with rice
Heat a few tablespoons of oil in a skillet on medium high heat.  Add chopped onion and cook for a few minutes.  Season both sides of chicken with salt, pepper, and thyme (sorry I don't know the amounts, I just kind of sprinkle a few pinches of each on each side).  Push the onion to the side of the pan to make room for chicken.  Cook the chicken on medium to medium high heat until done (about 4-5 minutes per side).  Remove chicken and cover with foil to keep warm.  Add the raspberry jam and a few tablespoons of balsalmic vinegar to the onions to make the sauce.  Serve with rice and veggies.  :)
